A Special Cooking Adventure for “National Pancake Day”
A rather late entry for the day, but I just had to get this special Literary Cooking Adventure up before going to bed. I cooked, filmed, edited, and uploaded everything this evening and now I’m dreadfully tired. Still, a couple of chocolate chip pancakes really hit the spot this evening, plus I still have batter for many many more in the days to come. That’s what I like to think about. Tomorrow, when I get up on yet another cold and snowy morning, at least I’ll have pancakes to look forward to.
The recipe for these was super simple:
1 1/4 cups flour
1 tbsp. sugar
1/2 tsp. cinnamon
1 tsp. baking powder
1/4 tsp. salt
Mix the dry ingredients together in a bowl.
In a separate bowl, mix the wet ingredients together:
4 tbsp. butter
1 cup milk
1 tsp. vanilla
Fold wet mixture into dry mixture until a batter is formed.
Add a cup of chocolate chips! (THE BEST PART)
Add a tbsp of butter to a cast iron pan (preferably) and heat on medium/low heat.
Add a desired amount of batter to the pan. Wait for bubbles to form and pop in batter before flipping. Leave it to cook for another minute or so before removing from the pan.
MAKE A GIGANTIC LEANING CHOCOLATE CHIP PANCAKE STACK AND EAT THEM ALL.
Okay, that last step isn’t really necessary. I mean, think of the calories you’d have consumed in one day. Crazy.
What you really should do is save some for later.
