It was hot in the city that night; hotter than any day I could remember. I was just closing up the office. It had been a hell of a day and all I could think about was settling into bed and finally catching some sleep. Just then, there was an unexpected knock at my door. I called for them to come in. And there, standing in my door, was the most handsome pizza I’d ever seen in my entire life.
Really though. I think I’ve found my new favorite pizza. Pear Bacon pizza sounds kind of strange, yes, I’ll admit. But, it is mouth-watering, sweet and savory and perfect in every possible way. This sauce-less, artisan pizza was probably one of my favorite literary Cooking Adventures to date. I’ve made it three times now!
Owing to the fact that this was the first time I’d made it, there were a few hitches along the way. In a tribute to Raymond Chandler’s “Farewell My Lovely”, I sauntered into the kitchen and took up my knife and rolling pin, ready to investigate this decadent pie.

Ingredients
1 lb. pizza dough (I used pre-made Portland Pie Company dough–garlic flavor!)
1 yellow onion, thinly sliced (used a small one)
1/4 tsp salt (I didn’t measure, just used a shaker on dough)
1 tsp. olive oil
1 tsp. thyme (again, I didn’t measure. Just used as much as I felt like)
1 pear, sliced (I ended up using an Anjou pear. It was nice and firm and gave a good sweet flavor)
1 cup of mozzarella cheese, shredded (I honestly used an Italian blend for this and just added as much as I felt like adding)
3 slices of prosciutto (I used bacon instead. Doesn’t cost as much and tastes AMAZING on pizza. Anyone who knows me will understand)
Directions
Preheat oven to 450 (or whatever is on the instructions for pre-made dough. Mine was 475.)
Spray baking sheet or pizza stone with cooking spray. (Pizza stone is optional. If it’s well seasoned, you don’t really have to spray it.)
Add olive oil to skillet and heat. Add onions and let them caramelize. This takes about 10 minutes.
Spread your pizza dough over the pizza stone or baking sheet. (This is much more difficult to do when your rolling pin is broken…like mine is.) Make sure that it is spread evenly.
Brush olive oil over the top of the pizza dough evenly. (I used the back of a spoon.)
Season dough with salt, pepper, and thyme. (Again, I only used as much as I felt like. Since bacon is rather salty, I didn’t add that much salt.)
Sprinkle cheese over pizza dough. (Use as much as you want. The original recipe adds gorgonzola, gouda, and all kinds of other things that I wasn’t too excited about.)
Place slices of pear and bacon over your pizza. (Use as much or as little as you want. These two compliment each other nicely though.)
Bake pizza for 15-20 minutes. (Depending on the temperature, it could be either. My oven runs pretty hot so it only cooked for 15 minutes. When I did it in my mom’s oven, it had to go for 20.)
