So, when I decided to make coleslaw alone for a Cooking Adventure, I may have been underestimating just how much of a meal it could make by itself. I mean, this coleslaw was BITCHIN’, don’t get me wrong. But once you’ve munched on it for four days straight like some kind of bovine cabbage lover, you really do start to miss eating other food. Yes. The above picture shows the coleslaw paired with a burrito. Don’t try to understand it. Just know that I needed to eat SOMETHING besides coleslaw that night. I decided that in order for this to be a really interesting adventure, I’d pair it up with my very firstĀ attempt at making Chicken Parmesan. When I really get down to the details, the coleslaw was really more of a “frolic” than an adventure. I mean, it’s cutting stuff up (unless you’re lazy like me…) and tossing it together with other stuff in a bowl. Not all that difficult. Anything involving chicken, however…instant stories to tell, old friends. Instant stories to tell.

COOKING ADVENTURE #56: Lasagna

Imagine getting home from a seemingly super long day at work. Snow has just begun to fall outside and you are absolutely chilled to the bone. You get inside, peel off your coat, turn up the heater and look into your fridge for dinner. And there, staring up at you with a heavenly glow is a casserole dish full of scrumptious meaty lasagna. This is the euphoria I’ve been having the last couple nights. There are only a few comfort foods that make me this excited to rush home and eat. Lasagna is definitely one of them. Thursday, when I’d gotten home, I assembled all of the ingredients on the counter, prepared to dive into what would hopefully be a better dinner than my stew from last week (Eeehhhhwwww). All in all, the recipe was very easy which I was grateful for. It also didn’t have me using a bunch of weird ingredients (like coconut milk). However, nothing can be “too” easy. My kitchen utensils have ways of refusing cooperation, which is precisely what happened this time around. I’m beginning to think that Matilda, my demonic grater, is staging a coup with the other utensils against me…

Forget Me (Chicken) Not Pie

COOKING ADVENTURE #35: Chicken Pot Pie

I’ll be frank, readers. There have been very few times that a cooking adventure has actually gone the way it was supposed to with no problems. In fact, I can count these times on one hand. However, we can now add this cooking adventure to that list. Not in my wildest dreams did I expect this recipe to turn out so well. And even better, it is something I can eat! It also happens to be one of my favorite comfort foods. While I have been trying to branch out on the things I eat (I ate most of a hamburger this past weekend!), I’m still playing the eating game cautiously. All it takes is one wrong food to send me into a painful ulcer fit. Now that I know how to make this hot comforting dish, I plan on doing it often. It’s not complicated by any means, uses very few ingredients, and there’s almost no way I can botch it up… unless I forget certain ingredients, which… I won’t lie to you… I did once during this adventure. Doesn’t matter. The pie turned out perfect without it and it tasted like something… that someone else besides me made.
